About the Blogger:

My name is Elizabeth Ernst Griffon, and I'm from Monroe, LA. I'm married to the most wonderful man, and we have two little boys who keep us busy! I am an English teacher and a yoga teacher, and I have zero free time. I'm also a graduate of the M.A.T. Program at Louisiana Tech, but it took me awhile to get to this point.
All of my life I wanted to be a veterinarian like my grandfather. I graduated high school, and majored in Animal Science at Louisiana Tech. I also began working at a veterinary hospital in West Monroe. However, after working there for an extended period of time, I realized that veterinary medicine is not my passion. I love animals, don't get me wrong (I have 7 rescued pets, I foster cats and dogs periodically, and I'm the co-sponsor of the Paws Club at OPHS), but my future is not in veterinary medicine. During my undergraduate classes I had the opportunity to be a teaching assistant and tutor for several classes, and discovered a love of teaching.
I graduated with a degree in Animal Science in 2011 with quite a few English electives (it's my favorite subject). In 2013 I had the opportunity to begin teaching at Ouachita Christian School in Monroe. I taught English II there for three years, got into the M.A.T. Program at Tech, and began my career in education. In 2016 I made the jump to public school, and I teach Speech and Creative Writing at Ouachita Parish High School in Monroe, and I absolutely love it. I couldn't see myself doing anything else.

Vet I store for vets till I discover one which I belief, since I must know that they'd deal with my pet the identical method they'd deal with their very own. The difficulty with our deep devotion to and love of our pets is that, at instances, it might probably empty our wallets, extra so if we don't spend money on the pet's well being by getting VIP pet insurance coverage.
